Perfect Super Bowl Snack-Baked Vegan Jalapeño Poppers
With the Super Bowl quickly approaching most of us are looking for yummy and healthy snacks to serve during the big game. Here’s my super simple and healthy take on a Super Bowl favorite, baked jalapeño poppers.
I always try to cut dairy and starches when possible, so my version is vegan and without breadcrumbs.

Ingredients:
- 12 jalapeño peppers-sliced in half lengthwise
- 4 oz light cream cheese- I used Tofutti
- 4 oz shredded low fat sharp cheddar cheese-I used Daiya
- 7-10 medium scallions- chopped
Step 1- pre-heat the oven to 350.
Step 2- wash the jalapeños and slice in half length wise.
Step 3- using a small knife or spoon remove the seeds and membrane from the jalapeño halves.
Step 4- combine the following ingredients in a bowl:
Step 5- spray a baking sheet with non-stick cooking spray.
Step 6- using a small spatula, fill each jalapeño half with cheese mixture and place on the baking sheet.
Step 7- bake for 8-10 minutes until the cheese is melted and the jalapeños are warm to the touch.
