Vegan Spicy Chickpea Pizza
I am constantly looking for healthy pizza alternatives, especially since I have been cutting dairy out of my diet. I found a plethora of recipes on Pinterest and decided to give this one a try tonight.
Per usual, I made slight changes to the recipe. The original recipe can be found here: Vegan Richa
First and foremost there are two options for the crust: 1- you can buy a pre made crust (which I did from Whole Foods) 2- you can make a cauliflower crust. I have done this before and of course this is a healthier option, its just a little more time consuming.
Ingredients (not including the crust):
Spicy chickpeas:
- 3 tbsp hot sauce
- 1 1/2 tbsp Sriracha
- 2 tsp olive oil
- 2 cups chickpeas
White sauce:
- 1/2 cup cashews-ground
- 3/4 cup almond milk
- 2 tbsp flour
- 2/3 tsp salt
- 1 tbsp olive oil
- ground black pepper
Garlic sauce:
- 2/3 of the white sauce
- 4 garlic cloves-chopped
- 1/2 tsp onion powder
- 1 tbsp nutritional yeast
- 1 tsp apple cider vinegar
- 1/3 of the white sauce
- 1 tbsp ranch seasoning
- 1/2 tsp celery seeds
- 1/2 tsp apple cider vinegar
Optional toppings:
- Jalapeños
- Cheese
Step 1- pre heat oven according to crust, usually 400 degrees.
Step 2- create the chickpea mixture and let marinate, combine the following ingredients:
- 3 tbsp hot sauce
- 1 1/2 tbsp Sriracha
- 2 tsp olive oil
- 2 cups chickpeas
Step 3- create the white sauce by blending the following ingredients:
- 1/2 cup ground cashews
- 3/4 cup almond milk
- 2 tbsp flour
- 2/3 tsp salt
- 1 tbsp olive oil
- ground black pepper
Step 4- pour 1/3 of the white sauce into a bowl and set aside.
Create the garlic sauce by adding the following ingredients to the white sauce in the blender:
- 4 garlic cloves-chopped
- 1/2 tsp onion powder
- 1 tbsp nutritional yeast
- 1 tsp apple cider vinegar
Step 5- create the ranch sauce by combining the following ingredients:
- 1/3 of the white sauce
- 1 tbsp ranch seasoning
- 1/2 tsp celery seeds
- 1/2 tsp apple cider vinegar
Step 6- layer the pizza crust with the white/garlic sauce.
Step 7- add the spicy chickpea mixture, smashing a few chickpeas to ensure placement.
Step 8- top with ranch sauce.
Step 9- cook according to crust instructions, usually 10 minutes.
Step 10- broil for 1 minute to melt cheese and make the crust crispy.
Step 11- add additional toppings; jalapeños, green onions, ect.
