Vegan Spicy Stuffed Shells
I cannot seem to keep my love for pasta at bay, so rather deprive myself I enjoy creating new healthier alternatives. These vegan spicy stuffed shells were a hit for meatless Mondays at my house!
Ingredients:
- 1 box Jumbo shells
- 15 oz Black beans-rinsed & dried
- 1 Yellow onion-chopped
- 3 oz Cream cheese- I used Tofutti
- 1 cup Shredded cheese- I used Daiya
- 1 1/2 tsp Chilli pepper
- 1/4 cup Hot sauce-I used Sriracha
Step 1- Preheat oven to 350
Step 2- Cook jumbo shells according to packaging, usually 10 minutes in boiling water
Step 3- Cook onion for 5 minutes, until transparent
Step 4- Combine the following in medium mixing bowl:
- Black beans
- Cream cheese
- Chilli pepper
- Hot sauce
Step 5- Once the shells have cooled to the touch, fill with black bean mixture
Step 6- Place in Pyrex baking pan
Step 7- Top with additional hot sauce and shredded cheese (optional)
Step 8- Bake for 20 minutes
Step 9-Top with fresh basil
