Spicy Eggplant Tacos
Here’s a recipe that is sure to be a hit on Cinco de Mayo, Meatless Monday, or Taco Tuesday; Spicy Eggplant Tacos.
Ingredients:
- 2 Eggplants- sliced 1/4 inch thick lengthwise
- 2 cups Pecan halves
- 3 Garlic cloves-chopped
- 1/3 cup Onion- chopped
- 1/3 cup Cilantro
- 1/3 cup Parsley
- 1/2 tsp Red wine vinegar
- 1/2 cup vegetable oil
- 1/2 tsp Chilli powder
- Cajun spice
- Vegan cream cheese (optional)
Step 1- Cover both sides of the eggplant with cajun spice and set aside
Step 2- Place pecans in food processor (I use my Kitchen Ninja) until a powder substance
Step 3- Combine the following ingredients in the food processor:
- Pecans
- Garlic
- Onion
- Chilli powder
- Cilantro
- Parsley
Step 4- Place pecan mixture in mixing bowl (Optional: add Vegan cream cheese)
Step 5- Rinse and pat dry eggplant slices
Step 6- Heat large pan over medium heat
Step 7- Cook the eggplant slices for 1 minute on each side
Step 8- Place cooked eggplant on easy to plate dish (I used a baking sheet with parchment paper)
Step 9- Once cool to the touch take a small spoonful of the pecan mixture and place in eggplant slice, roll, and secure with toothpick
