Simple Vegan Dinner

I originally posted this recipes a couple years ago, but during the heat wave & quarantine I’m looking to maximize my time in the kitchen. This simple vegan dinner is quick & utilizes my Imperfect Foods box!

I feel like people hear the word VEGAN and think one of three things: 1- salad, 2- prep time, 3- expensive. The truth is, there are plenty of plant based meals which require little prep time and are relatively inexpensive. Here’s one of them!

The best part of this recipe, the veggies can be swapped for whatever is in season in your area. Also, you can make a large batch of this for lunches throughout the week. 😀 I’ll share my go to choices!

Ingredients:

  • Asparagus
  • Brussels sprouts
  • Cherry tomatoes
  • Basil
  • Orzo
  • Follow Your Heart lemon herb dressing
  • Coconut oil to cook the veggies

Prep time: About 10 minutes to chop the veggies.

Cook time: About 10 minutes; cook the orzo & veggies (asparagus & brussels sprouts) at the same time.

Combine the orzo & veggies, top with cherry tomatoes & basil, & dressing

Serve, & enjoy! 🤤
