Black Bean Burgers

I have a new recipe for you all; ~20 minute (prep time) black bean burgers. Delicious, simple, and perfect for spring.🤤

Ingredients:

  • 1 can (15.5 oz) black beans- rinsed
  • 1/2 red bell pepper
  • 1/2 cup scallions
  • 3 tbsp cilantro, optional
  • 3 garlic cloves, optional
  • 9 tbsp Just Egg, or 1 large egg
  • 1/2 cup oats
  • 1 tbsp cumin
  • 1 tsp chilli powder- optional

Instructions:

  • Rinse and pat dry black beans
  • In a food processor or blender combine:
    • bell peper
    • scallions
    • cilantro
    • garlic
  • Next, add:
    • just egg
    • oats
  • Lastly, combine:
    • black beans
    • cumin
    • chilli powder
  • The constancy is really personal preference, I personally like the beans to be more mashed
  • Divide mixture into 4 patties
  • Place on wax paper and freeze for 2 hours
    • or until you are ready to cook, then thaw in fridge for a couple hours if it’s been a few days
  • Cook in a skillet over medium heat for 7 minutes each side
