High Protein Lunch

If you are like me, I tend to wait too long to eat lunch and make poor choices when I feel really hungry- I just want food now! I find High Protein Lunch is perfect when I am busy (and easy to meal prep if need be).

Finding healthy, high protein lunch ideas is more difficult if you are plant based as so many meat alternatives are filled with seed oils; that is why I love Abbot’s. They have cleanest ingredients in a plant based meat replacement that I have found. This brand is a staple in my kitchen for all meals, not only lunch.

Ingredients:

  • 1/2 cupt Abbot’s chopped chick’n
  • 1/2 cup Spicey tofu (with chilies)
  • 1/2 cup Arugula
  • 1 tbsp Cheese (optional)- I use VioLife
  • 1 tbsp Dressing (optional)

Instructions:

  • Mix and enjoy!

Today I added cucumber and strawberries because they were already chopped.😊
