Vegan Baked Cauliflower Potato Sliders
In my continuing search for healthy Vegan dinner options, its harder than one might expect if you want something more than a salad, I came across a taco recipe I turned into sliders. As I have mentioned before, Thug Kitchen is one of my favorite resources. This recipe is a spin off their Roasted Beer and Lime Cauliflower Tacos (in their cookbook), I went beer-free-I know, boring.
Below is the recipe for my Vegan Baked Cauliflower Potato Sliders, super quick and they make for delicious leftovers!
Ingredients:
- 2 tbsp soy sauce
- 2 tbsp hot sauce
- 1 tsp chilli powder
- 1/2 tsp cumin
- 1/2 tsp garlic powder
- 1 tbsp coconut oil-melted
- 1/4 cup vegetable broth
- 2 garlic cloves-chopped
- 1 head of cauliflower- chopped
- 1/2 bag purple potatoes- chopped (optional)
- avocado-sliced (optional)
- cherry tomatos-sliced (optional)
- buns (tortillas are an option for tacos)
Step 1-
Preheat oven to 400.
Step 2-
In a medium sauce pan combine the following ingredients and heat for about 2 minutes:
- 2 tbsp soy sauce
- 2 tbsp hot sauce
- 1/4 cup vegetable broth
- 2 garlic cloves
Step 3-
Add cauliflower and potato to sauce pan mixture and simmer for about 2 minutes.
Step 4-
Combine the following ingredients in a medium mixing bowl:
- 1 tsp chilli powder
- 1/2 tsp cumin
- 1/2 tsp garlic powder
- 1 tbsp coconut oil-melted
Step 5-
Add cauliflower and potato to the spice mixture, make sure all the pieces are coated.
Step 6-
Place the cauliflower and potatoes in a pyrex dish (baking sheet will work too). Bake 18-20 minutes.
Step 7-
Toast your buns or warm your tortillas, prep your avocado, tomato, and whatever else you want to add.
