Vegan, Creamy Black Bean & Quinoa Wraps

I get a lot of questions regarding what I make for dinner that doesn’t require a lot of time; my secret, the crockpot. Every working woman needs a crockpot in her life.

The dish I made last night, is so quick, easy, and always a hit, cream black bean and quinoa warps (or bowl). Over all prep- about 10 minutes. You can do this the night before and set it before you leave in the morning, you may want to do a test run while you are home, just to double check your crockpot settings.

Ingredients: 

  • 1 cup black beans
  • 1 cup quinoa-rinsed
  • 1/2 yellow onion- chopped
  • Hot sauce (optional)
  • 16 ounces Vegan cream cheese if use meat replacement, otherwise use 8 ounces (optional)- I used Tofutti
  • Meat replacement (optional)- I used Sweet Earth chipotle grounds
  • Tortillas- I used Ezekiel tortillas

Step 1-

Add 1 cup of black beans, 1 cup quinoa, 3 cups of water, and onion to your crockpot.

Stir the contents around so nothing is sticking to the sides of the crockpot; let cook for 1.5- 2 hours.

Step 2-

Stir the black bean and quinoa mixture. Add meat replacement, cream cheese, and hot sauce. Make sure the new ingredients are mixed throughly with the black beans and quinoa. Switch your crock pot to warm for approximately 30 minutes, if this is not an option be sure to stir every 5-10 minutes.

Step 3-

Chop up an avocado, add mixture to a tortilla (or bowl) and enjoy!
