Lunch- Spicy Tofu & Veggies
Everyday I tell myself I am going to have a healthy lunch, then I wait too long to each and end up eating too much of, well, everything. Because of that I have been ensuring easy (5 minutes or less) lunch ideas. If you can relate here is a go to Lunch- Spicy Tofu & Veggies.
I love spicy tofu, usually I will snack straight from the container but recently I started adding left over veg from the night before (usually air friend brussels or cauliflower) and/or avocado (depending if I have one on hand)- and it is the best less than 5 minute lunch.
Simple, quick, little clean up, and easy to track macros.
This is my go to, but honestly you can mix whatever makes your heart happy.
Ingredients:
- Tofu
- Local in season veggies
- Hot sauce (optional)
- (Vegan) cheese (optional)
Instructions:
- Chop
- Combine
- Enjoy 🤤
