I was recently introduced to eggplant. Not that I did not know it existed before, but I was completely unaware of how nutritious it is. For the past month I have been chopping up eggplant and putting it in everything, most recently black bean & eggplant tacos. A super easy and quick dinner idea for Meatless Monday and the left overs store well for lunch the next day!
- 1 tsp Chilli powder
- 1 1/2 tsp Cumin
- 1 tsp Olive oil
- 1 Yellow onion- chopped
- 3 Garlic cloves- diced
- 1 Jalapeño-chopped
- 1/4 cup Cilantro
- 1 large Eggplant- chopped
- 16 oz Black beans- rinsed
- 1 Avocado-optional
- 1/2 cup Vegan cheese- optional
Step 1- Heat the following ingredients over medium heat in large pan for 2 minutes:
Step 2- Add the remaining ingredients:
- Black beans
- Chilli powder
Cook over medium heat for 10-12 minutes, stirring occasionally.
Step 3- Heat tortillas and serve warm. Top if fresh avocado and Vegan cheese.
