::Black Bean & Eggplant Tacos::

I was recently introduced to eggplant. Not that I did not know it existed before, but I was completely unaware of how nutritious it is. For the past month I have been chopping up eggplant and putting it in everything, most recently black bean & eggplant tacos. A super easy and quick dinner idea for Meatless Monday and the left overs store well for lunch the next day!


  • 1 tsp Chilli powder
  • 1 1/2 tsp Cumin
  • 1 tsp Olive oil
  • 1 Yellow onion- chopped
  • 3 Garlic cloves- diced
  • 1 Jalapeño-chopped
  • 1/4 cup Cilantro
  • 1 large Eggplant- chopped
  • 16 oz Black beans- rinsed
  • 1 Avocado-optional
  • 1/2 cup Vegan cheese- optional


Step 1- Heat the following ingredients over medium heat in large pan for 2 minutes:

  • Onion
  • Garlic
  • Jalapeño

Step 2- Add the remaining ingredients:

  • Eggplant
  • Black beans
  • Cilantro
  • Cumin
  • Chilli powder


Cook over medium heat for 10-12 minutes, stirring occasionally.


Step 3- Heat tortillas and serve warm. Top if fresh avocado and Vegan cheese.
