Taco Salad w/ Vegan Jalapeño Cilantro Dressing
It’s been two years since I became an herbivore and its been incredibly difficult to create food that does not contain a starch. Here is a new favorite lunch recipe, Vegan taco salad with jalapeño cilantro dressing. I love this recipe because its healthy and super easy to double up for my husband’s lunch.
Ingredients:
- 1/4 Cucumber, diced
- 1/2 cup Black beans-rinsed & dried
- 2 cups Spinach-any greens will work
- 1/4 Mango-chopped
- 1/2 Avocado, chopped
- 1/2 Jalapeño-chopped
- 2 Garlic cloves-chopped
- 1/2 cup Cilantro-chopped
- 1/2 tbsp Apple cider vinegar
- 1/8 cup Vegan yogurt
- 1 tsp Agave
- Salt
Step 1- For the dressing, combine the following in a food processor:
- Jalapeño
- Garlic
- Cilantro
Step 2- In a small bowl combine jalapeño mixture with the following:
- Apple cider vinegar
- Vegan yogurt
- Agave
- Salt-to taste
Step 3- Layer salad ingredients in large mason jar (dressing can be placed at the bottom of the jar) I prefer to store separately
Step 4- Top with chopped avocado before you enjoy!
