For me the most difficult part of eating healthy was cutting out pasta. That is until I found this super easy and healthy recipe!
There is an abundance of substitution possibilities. I added black beans for more fiber and to cut down on the amount of pasta I eat per serving. I also used Vegan yogurt instead of Greek yogurt.

- Quinoa pasta-I used Ancient Harvest
- 3/4 cup Vegan yogurt- I used Whole Soy Co
- 1 can black beans-strained and rinsed
- 1 large avocado-mashed
- 1 cup celery-chopped
- 1 cup blueberries
- 1 tbsp dijion mustard
- Black pepper
Step 1- cook pasta per instructions, usually 10 minutes in boiling water.
Step 2- strain and rinse black beans.
Step 3- mash avocado in large mixing bowl.
Step 4- add tyogurt and mustard to the avocado and mix well.
Step 5- combine the following ingredients in the mixing bowl:
- black beans
- black pepper to taste
Step 6- once fully cooked, strain and rinse the pasta with cool water.
Step 7- add pasta to the avocado mixture.
