::Orzo & Veggies, Simple Vegan Dinner::

One of my favorite quotes, “If you fail to plan you plan to fail.” This could not be more true when it comes to your diet/nutrition.

As a Vegan BEACHBODY coach, I receive a lot of questions regarding meal options which are compliant with the containers (aka 21 Day Fix containters).

I feel like people hear the word VEGAN and think one of three things: 1- salad, 2- prep time, 3- expensive. The truth is, there are plenty of plant based meals which require little prep time and are relatively inexpensive. Here’s one of them!

The best part of this recipe, the veggies can be swapped for whatever is in season in your area. Also, you can make a large batch of this for lunches throughout the week.

Ingredients:

  • Asparagus (1 veggie)
  • Brussels sprouts (1 veggie)
  • Cherry tomatoes (1/2 fruit)
  • Basil (green group)
  • Orzo (1 carb)
  • Follow Your Heart lemon herb dressing (1 dressing)
  • Coconut oil to cook the veggies (1/2 oil, nuts, butters)

Prep time: About 10 minutes to chop the veggies.

Cook time: About 10 minutes; cook the orzo and veggies at the same time.
